Why is the low fat cookies worse for you than the regular fat cookies?

Manufactures begin with the cheaper oils (soy, corn, cottonseed or canola) already rancid from the extraction process. These extracted process are mixed with tiny metal particles usually nickel oxide, a soap like emulsifiers and starch. These materials are squeezed into the mixture to give consistency, and to purify the mixture one more time they heat it to high temperatures and steam clean it to removes the bad odor. Bleach is used to get rid of the grey color it has through the process. To make this material appetizing dyes and strong artificial flavors are added.
